This month’s recipe is a simple pineapple salsa consisting of chopped fruits and vegetables and seasoned with herbs and spices. It is delicious paired with chicken or fish, topped on chickpea cakes, black bean patties, garnished on top of beans, or your favorite taco or quesadilla. It even makes a great appetizer by itself taking the place of a traditional tomato salsa when served with tortilla chips. The recipe makes about 4-8 servings.

Ingredients:

1 whole pineapple, medium diced
1/4 red onion, finely diced
1/4 red pepper, finely diced
2 scallions, sliced thinly
2 tablespoon cilantro
1 jalapeño, seeds removed and finely diced
Juice from 1 lime
1 tablespoon olive oil
2-3 tablespoons honey, agave or maple syrup
1/4 teaspoon cumin
1/8 teaspoon cayenne
Salt and pepper to taste

Directions:

Mix all ingredients together in a bowl and let sit for at least an hour. Adjust seasoning as needed.
