Quick and healthy Black Bean Hummus fajitas are the perfect addition to your weekday dinner menu during the busy back-to-school season. We recommend loading them up with fresh zucchini, squash and peppers from the last of the summer’s bounty. This basic recipe is mild and kid-friendly but can be customized to a preferred level of heat with your favorite hot sauce. Serves 2 – 4.

Ingredients:

  • 1-2 tbsp. olive oil
  • ½ sm. white onion, sliced into thin strips
  • 1 med. green pepper, sliced into thin strips
  • 1 med. zucchini, sliced into 1/8 in. half moons
  • 1 med. yellow squash, sliced into 1/8 in. half moons
  • 1 tbsp. high quality taco seasoning (we recommend Spicely brand)
  • ¼ cup water
  • 1 tub Roots Black Bean Hummus
  • 8 whole wheat taco shells
  • 1 lime, sliced
  • OPTIONAL: Extra firm tofu and additional taco seasoning
  • OPTIONAL: Hot sauce

Preparation:

  1. Heat oil in a large skillet. Add onion and green pepper, saute over medium-low heat for 5 minutes.
  2. Add zucchini and yellow squash. Saute for another 5 minutes. If desired, add small cubes of extra firm tofu and a squirt of fresh lime.
  3. Add ¼ cup water and 1 tbsp. taco seasoning. If using tofu add 1 additional tbsp. of taco seasoning.
  4. Simmer until liquid cooks down and everything is coated with seasoning blend.
  5. Slather warmed whole wheat taco shells with a generous portion of Roots Black Bean hummus and add seasoned vegetable blend. Serve with slice of fresh lime.
