1 cup plain oats (instant is fine)

2/3 cup shredded coconut flakes

½ cup peanut butter (creamy or chunky)

½ cup ground chia seeds

½ cup mini chocolate chips

1/3 cup honey

1 tsp vanilla

Mix everything together, refrigerate for an hour until firm enough to roll into small, bite-sized balls or press in a pan and cut into bars when firm. Store in fridge or freezer.

Should be doubled if you want them to last more than a day or two!
